The Rosso Integrale (Whole Red Rice) is a stray red rice strain which for a long time spontaneously appeared in fields and was seen as an intruder to be weeded out. Then producers realised that they could plant the red rice alone. Thus the “rogue” rice became a new variety. Red rice is different from the others in terms of its fuller flavour, its dark red grains, and its rich and pronounced aromas. It also requires a longer cooking time – about 40 minutes. It can be served on its own, as an accompaniment to other dishes or in salads, adding its unusual deep red colour and taste.
